Shrimp & Zoodle Saute

It’s been a long journey back to Texas, but we finally made it back!

It took us three days with the baby, but we had a safe journey and arrived to our new house in one piece! With all of the chaos I have been so behind on posting! I decided today I wanted to put my recipe up from last nights first meal cooked in the new house!

Happy 4th of July!


  • wheat penne pasta
  • zucchini zoodles
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 1/4 sweet onion
  • red pasta sauce of choice
  • shrimp
  • salt
  • pepper
  • garlic
  • Olive oil


I love how easy this meal was to throw together! With prep of chopping the veggies total time was probably about 15 minutes.



Boil pasta in water

In one pan, add olive oil (I always eyeball I do not measure) and add in your chopped onions. Let the onions simmer down and start to caramelize, and then I added in all my chopped peppers. Let the veggies cook down until the peppers are soft to the texture you prefer.
















When the onions and peppers are almost all the way cooked I added in my Zuchinni noodles. I have a Vegetti maker, but for convenience I picked up a container of pre-made zoodles, you just have to cook them. I then added in some garlic and salt and pepper.







While everything was simmering, I added this mushroom sauce into a sauce pan to start heating it up! I had used pre-cooked shrimp so I put that into a strainer and ran cold water over top to rinse them off.






Once the veggies were cooked I tossed in the shrimp and let that warm up. I drained the pasta when it was done of course and set aside.






And that’s it! Put everything on a plate and eat! Super easy and convenient when you have babies or kids running around. Enjoy!
