My mother makes this incredible enchilada dish. I don’t know when she started making this, but our entire family hopes she will never stop making it. If you love anything about chicken, gooey cheese and easy meals… go ahead and do yourself a favor and try this recipe out!

Moms Chicken Enchiladas
creamy, gooey, cheesy chicken enchiladas
- 8 ounces cream cheese softened
- 2 tbsp water
- 2 tsp onion powder
- 2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 5 cups cooked chicken diced
- 20 6 inch flour tortillas room temperature
- 2 10 ounce cans condensed cream of chicken soup undiluted
- 2 cups sour cream 16 ounces
- 1 cup milk
- 2 cans chopped green chiles 4 ounces each
- 2 cups shredded cheddar cheese 8 ounces
- 1/2 pack taco seasoning
Preheat oven to 350 degrees
In a large mixing bowl, beat the cream, water, onion powder, cumin, salt and pepper until smooth
Stir in the chicken
(mom steams the chicken breast with water in the cast iron skillet. Once cooked shred with a fork and add taco seasoning packet)
Place 1/4 cup down the center of each tortilla
Roll up and place seam side down in two greased 13x9 inch baking dishes
In a bowl, combine the soup, sour cream, milk and chilies and then pour over the enchiladas! This is the good stuff
Bake, uncovered, for 30 to 40 minutes or until heated through
Sprinkle with cheddar cheese and then bake 5 more minutes. This puts these babies right over the top
Serve! You may want to double the recipe.. or triple, and just have a huge party with this!
